Is this possible? To mark something complete yet it reappears without a due date. Just reappears for whenever you compete it next? So, repeating for frequency set for x number of times. Thank you!

I think you want to use defer dates with “repeat” or “defer another” status checked (you cannot specify ‘x’ number of repeats at this time though I believe it is in the next stage of updates).
This setting ensures “your defer without a due date” will re-appear. If you want to make sure you don’t miss your defer date task set a flag on it too.
