I have a template that I have created in Omnigraffle and others on the team are asking for a Visio version. What’s the best approach, can it be exported or do I need to start from scratch and manually re-create it.

Export to Visio is your best bet. This feature is only available in OmniGraffle Pro.
How do you export as a stencil I can see how to export as a visio drawing but stencils ?
You can only export as Visio format. They will have to open it and convert it to a stencil in Visio.
