This may be a really silly question, but I have just downloaded OmniOutliner for the first time and can’t seem to find anyway to see the sidebar for styling text etc? Any pointers appreciated!
I don’t think that the free version offers the sidebar as it is a pro feature. Not sure what is included with the trial version but it seems to be the free (or ‘essentials’) one.

You can always email support to confirm. Generally, if you go into the ‘help’, it will show you the help for the version that you have. You can also read the various ‘help’ documentation on one of the support pages.
