when I create a main task and several subtasks I can not fold and unfold tasks from iOS. Is this normal?

It is normal, expected behaviour at present.
I believe the ability to collapse or fold them is scheduled for a future release. Just in case, you might want to [email in a feature request](mailto:omnifocus-ios@omnigroup.com], though to make sure your interest in the feature is logged.

I wouldn’t say this is expected behaviour or normal. Hopefully they will fix this as it’s been requested many many times for a long time.
