In the book list theme there’s a star rating column. How do I create such rating? If I see inspector for that column, I can see that it’s a pop up list and the stars are created in the box. But I’m not sure how to add similar kind of stars on another document.

They appear to be just characters that ship with the operating system: if you go to Edit->Emoji & Symbols in a Mac application like TextEdit, scroll down past the emoji, you eventually come to a Bullets/Stars section where you can find them and insert them into a document. If you have an existing outline with the stars in a column, you could also copy the black and the white star and paste them into another document.
