Does the ‘194 zip files’ in my iOS Settings screen refer to all OF files backed up and/or archived etc, please?

This number is in reference to the internal structure of your OmniFocus database. It most closely correlates with how many changes you’ve made recently, and it will fluctuate over time as your devices sync with each other. There’s generally no need to worry about this number; it’s there for quick access should Support request it during an email conversation.
