Is there a way in Omnigraffle Pro 5.x to modify an object that appears on multiple canvases in a document? For example, font size for the same piece of text.

If the object is on a Shared Layer, modifying it will affect all canvases.
It is not on a shared layer, unfortunately. It is not in the same location on all canvases.
You can create linked objects as you describe using LinkBack.
Select the object and choose Edit ‣ Copy As ‣ PDF and paste the result onto your canvas. The resulting object is now an embedded file that can be duplicated and used throughout your document. If you need to make a change to every instance of that object, just double-click to open in a new window and save your changes. I hope that helps!
