Now I have other actions which have not been finished either, and I thought if I give them a tag “unfinished” they would appear in the main Project “Unfinished” if I only could set some tags (“unfinished”) in this main Project “Unfinished”.

You want to build a list for unknown stuff? Do these items belong together or are they totally unrelated items? Were you going for a single action project to place them together? Are you working via tag lists?
Projects, Tags, and Perspectives are three distinct types of things, they all have different jobs in OmniFocus.
Projects are a way to group actions which aim to help you get to an outcome. e.g. a Project called
Book a holiday to Greece
With the 4 actions below
Visit travel agent to get brochures
Decide where to go.
Check passport is Current
book Holiday…
Tags are a way to mark Projects and Actions because they have some form of similarity. In the example above, I could tag “Visit travel agent to get brochures” as an Errand, and if I also need to buy Milk, I can add that as an action and tag is with the Errands Tag. You can use Tags to denote Energy Levels, Priorities, or Locations for example
Perspectives allow you to set rules which then show you actions and/or projects which match those rules. (e.g, show all Available Tasks which have a Tag of Errands)
That Perspective then only shows me available actions tagged with Errands. When I’m in Town I open the Errands perspective and get reminded to buy milk and also to pickup some travel brochures for my Holiday to Greece.
If you want to see Unfinished actions, you need to set up a Perspective which shows Actions with an Availability of Remaining this will show you every action you’ve added which is not Complete.
As @Logan says, you should find some videos or tutorials on the basics of OmniFocus so you understand how it works.
