Organizing completing tasks in a project

I have not figured out how to organize my multi-step tasks in one of my projects. Sometimes my steps require one action before the next can be completed but when I click that I have completed the first one then all of them are ticked and they immediately disappear. For example I would setup something as is demonstrated below. I would like to be able to click on the ‘buy new tire’ after I have completed that task but all of the actions will be removed when I do. I have tried both Parallel and sequential.

Project: Change bike tire

Actions
Change tire
-Take pump from storage locker
–Buy new tire

If you set the project as sequential and then put all three actions on the same level (no action groups) it should work as you describe.
