Is there any way to set up the review view to trigger on Monday’s and Friday’s vs. every 1 week, 2 weeks, etc?
Yes! and You are not allowed to leave the perspective before you haven’t reviewed Your tasks!

Seriously, I think you’re better off having a bi-weekly repeating task (within Your review schedule). Here, You could include a link to the review perspective if it is not anyway sitting in Your sidebar (as of now it will inadvertedly be there).
